KOOTU CURRY Kerala Style Kootu Curry… made with Yam, Plantain and Black Chickpeas – A Sadya Delicacy…! Ingredients •1 cup kadala / black chickpeas •1½ cup water + more •1 medium sized raw plantain (cut into cubes) •1 cup yam (cubed) •1 tsp chili powder •½ tsp turmeric powder •½ cup + ½ cup grated coconut •½ tsp cumin seeds •1 tbsp pepper powder •1 tbsp jaggery •2 sprigs of curry leaves •2 dry red chilies •1 tsp mustard seeds •Coconut oil (as required) •Salt (as required) Instructions 1-Soak black chickpeas overnight. Pressure cook it with water and a pinch of salt for 3 whistles. Once cooled, drain the water and keep aside. Also set aside the cooked black chickpeas separately. 2-Grind ½ cup grated coconut with cumin seeds to a coarse paste, keep aside. 3-In a separate pan, add the above drained water, vegetables, turmeric powder, chili powder, & salt, and cook on a medium flame. Once it starts boiling, simmer it and cook until the veggies are soft, properly cooked, until the water dries out. Add more water if necessary. 4-Lightly mash the cooked vegetables with the back of a wooden spoon. Add the cooked black chickpeas and the grinded coconut paste, mix well and continue cooking till the raw coconut smell subsides. 5-Now add pepper powder and jaggery to the pan, mix well and check for the seasoning. Place the lid, cook for another 2-3 minutes, and then switch off the flame. 6-To prepare the tempering / garnish, heat oil in a separate pan and splutter mustard seeds. Add curry leaves, dry red chilies and grated coconut. Roast the coconut until they turn golden brown. 7-Pour this over the cooked chickpea veggies, mix well. Your Kootu Curry is ready, serve with rice and daal curry! Notes 1. Pumpkin and Ash gourd can also be added as alternate vegetables while making Kootu Curry. 2. Using jaggery in this dish is completely optional as it’s specific to certain places in Kerala. 3. Coconut oil is ideal for all authentic Kerala recipes. You’ll need: @traderjoes firm tofu @traderjoes frozen brown rice Broccoli @traderjoes coconut aminos Honey Sesame seeds Garlic powder Onion powder Salt + pepper Dry the tofu with a paper towel to soak up all the water. Cube it and cook it over medium heat in coconut oil (be patient, tofu takes longer to cook than meat). Steam the broccoli. Microwave the brown rice. For the sauce- mix 3 parts coconut aminos to 1 part honey. Add garlic powder, onion powder, sesame seeds, salt, and pepper. Fogettaboutit. 😋 . . . . Broth: 2 cups Chicken broth 1 tbsp Tamari 1/2 tbsp Rice wine vinegar 1 tsp miso paste 1 tsp fish sauce 1/2 tsp chili oil 1/2 tsp sesame oil 1/2 tsp salt 1 cup Napa cabbage 1/4 cup shiitake mushrooms . Meat: 6 oz ground 97% turkey 1/2 tbsp Sriracha 1/2 tbsp Tamari 1/2 tbsp black bean sauce 1 clove garlic 1/2" ginger S & P 3 green onion whites . Noodles: Rinse shiritaki noodles, soak in rice wine vinegar for 10 mins, rinse again. . Cook: Soft boil eggs and set aside to cool. Cook garlic, ginger, onion in pan, add meat and sauce and saute through. Combine broth ingredients in medium sauce pan and soft boil for 10 mins. Add noodles and cook 5 mins. . Build: Place meat in bottom of bowl. Add noodles, broth, vegetables. Peel and slice egg. Guys, it's a bajillion degrees here. Pumpkin pie spice season is coming, sure, but us Central California folks are not even close to PSL's, flannel and boots. 😑 . We still have a sunburn at the fair in October to achieve. 🤦🏼‍♀️ . That said, it was fall in my house if even just for a moment today.🎃 . Thyme chicken (0 pts), mashed potatoes (idahoan brand, 4 pts), Green Giant cauliflower stuffing (which is like 3 points a serving and wasnt worth it so I ditched it and replaced it with 3 more points of potatoes 😂), Heinz turkey gravy (0 pts for 2 tbsp), and whipped "candied" sweet potatoes (4 pts per serving) with torched marshmallow fluff on top. (1 pt per tbsp) 😋 . Kinda pointsy (12), yeah, but I had em' with 2 to spare. Also, it kinda cushioned the blow I received when my son brought home the very pizza I posted about in my last post.😭 . Gonna post the sweet potato recipe in my stories/highlights. Chicken pot pie insides = chicken pre-cooked, ham, onion, green beans and peas. I pre-cooked everything in butter in a frying pan on the stove while I baked the bottom crust in the oven. Once the crust is ready top with 2nd piece of crust and continue baking until the top is done (about 30 minutes in a 350° oven). Crust is: 2 cups fine ground almond flour 1/2 cup butter cold 1/2 tsp celery salt (I prefer celery seed but I didn't have any available 😉) 1/2 tsp salt 2 Tbsp coconut flour 1 egg yolk (you can use the egg white to brush on top if you want) Combine ingredients until pea sized pieces form then add water 1 Tbsp at a time. 2-3 Tbsp cold water Treat this like you would a regular pie crust. For inside: Cook chicken in butter or coconut oil in frying pan approximately 1-2 lbs Add chopped onions - 1/8-1/4 cup Add bone broth 1/4 cup Add desired seasonings - I used garlic powder, onion powder, dried parsley and lemon pepper. Add veggies - I used frozen peas and frozen green beans broken in half. Both together were about a cup but add veggies of choice. Heat until warm. #chickenpotpie #recipes #ilovetocook #pioneercooking

Singapore noodles 170g dried vermicelli rice noodles 1½ tbsp dry sherry or Shaoxing wine 3 tsp curry powder 1 tsp salt ½ tsp sesame oil ½ tsp sugar ¼ tsp white pepper ¼ tsp ground turmeric 2 tbsp peanut oil (or grapeseed, sunflower or vegetable oil) 2 large eggs, beaten well 225g chicken mince or thinly sliced Chinese barbecue pork (char siu) ½ small onion, chopped 2 cloves garlic, minced ½ large carrot, thinly julienned 2 tsp minced ginger ½ green capsicum*, thinly sliced ½ red capsicum*, thinly sliced 3 ounces beansprouts 3 garlic chives or spring onions, cut into 5cm pieces ½ pound shrimp, peeled and deveined METHOD Cook vermicelli noodles in boiling water for one and a half minutes. Drain without rinsing, place still hot in a large bowl and cover with a tea towel. Let stand 10 minutes. Pull on the noodles with tongs, chopsticks or clean hands to separate them. If the noodles are too long for easy eating, cut them into smaller pieces. Set aside. 2. In a small bowl, combine the sherry or shao hsing wine, curry powder, salt, sesame oil, sugar, white pepper and turmeric. Stir to mix well, and set aside. 3. Heat half a tablespoon of the peanut oil in a wok or large non-stick skillet over medium-high heat. Add the eggs and scramble until just cooked through. Transfer to a plate. 4. Clean wok or skillet if necessary. Add another half tablespoon of the peanut oil over medium heat. When hot, add the chicken mince or sliced char siu and cook, breaking up the ground chicken, until cooked through. Transfer to the plate with the eggs. 5. Add the remaining one tablespoon peanut oil. When hot, stir in onion, garlic, carrots, ginger and green and red capsicum. Stir fry until the vegetables have just softened, about three or four minutes. Stir in the beansprouts and garlic chives or spring onions and cook until they are heated through and beginning to take on some colour, one to two minutes. Remove to a plate. 6. 6. Add prawns and stir fry until firm and thoroughly cooked (the time will depend on the size of the prawns). Remove to a plate. 7. Add noodles to wok with sauce and 1/3 cup of water till sauce absorbs then add rest of ingredients back to wok then plate and eat

Pavlova Ingredients: For the merengue: -5 egg whites -1 cup sugar -1 tbsp corn starch For the cream: -2 cups heavy cream -1 cup powder sugar For the ganache: -1 chocolate bar or 1 cup chocolate chips -3-4 tbsp heavy cream Directions: Preheat oven to 225F. First prepare the merengue by mixing the egg whites on high speed until frothy. Add the sugar slowly and mix for 2 minutes. Then add the corn starch and whisk for about 10 minutes until very stiff. You can either use a piping bag just as I did or you can spoon out the merengue as you like. Make sure to use a parchment paper or a silicone mat to avoid sticking. Bake the merengue for about 1:30 hours ( I timed myself and it took exactly 1:30 hours to bake). Turn off the oven and let them sit in there for about 30 more minutes (This really tried my patience😁). Prepare the whipped cream by mixing the heavy cream with powder sugar on high speed until creamy. Pipe or spoon over the pavlovas as desired. To make the ganache, add chocoates and heavy cream in a small bowl and microwave for 20 seconds. Mix and let it cool for 2 minutes. I used a ziploc bag to drizzle. What are your favorite breakfast foods? 🍳🥑🥓 I intermittent fast 3-4 days a week and the other days I’ll kick things off with food that’s healthy, high fat, and high protein so I stay full. I have been obsessed with @foodforlifebaking Ezekiel 4:9 bread, @tedpeanutbutter smooth all natural PB, some honey from my uncle’s neighbor’s honeybees, banana slices, and a dusting of cinnamon.👩🏽‍🍳I avoid refined sugars when I can and stick to the natural sweetness of ripe bananas 🍌, dates, honey 🍯, etc. For a few years I was terrified of eating bread, but now I follow a simple rule—no fewer than ✅2g fat and ✅2g protein per slice. This fat and protein combo is what keeps you full and you probably won’t crave more than a slice in the morning (of course you’ll want to listen to your body though). I also have to say, sprouted bread crisps up better than any enriched flour bread does. MATCHA FROSTED BROWNIES🍫🌿Treat yourself to some antioxidant rich Matcha infused Cashew frosted brownies 😍 RECIPE BELOW 👇👇.⁠⠀ .⠀⁠⠀ Ingredients:⠀⁠⠀ ▪2 cups activated pecans⠀ ▪1/2 cup raw cacao powder⠀ ▪1/4 cup carob powder⠀ ▪2 cups (approx 24) Medjool dates, pitted⠀ ▪1/4 cup roasted almond butter⠀ ▪Pinch of good-quality salt⠀ .⠀ Frosting ingredients⠀ ▪1/2 cup raw cashews, soaked 4 hours in water then drained⠀ ▪1/4 cup coconut yoghurt⠀ ▪1 tsp pure vanilla extract⠀ ▪2 tsp matcha powder⠀ ▪1/4 cup rice malt syrup1/4 cup coconut oil⠀ .⠀ Method⠀ 1. Add pecans, cacao powder, salt and digestive powder to a high-speed food processor. Pulse until small crumbs form.⠀ 2. Add dates and almond butter and pulse again until a large sticky ball forms, then add the dough to a lined cake tin (we used a 15cm square one). Press down to form an even brownie base, then place into the freezer to set for 2 hours before making the frosting. ⠀ 3. To make the frosting, melt the coconut oil in a saucepan. This meal provides vitamin C, B6, magnesium, Phosphorus, fibre, and protein. . . || INGREDIENTS || . 🥄1 tbsp butter or olive oil 🌱1 leek the white part 🥔175 g potatos peeled and chopped 🥣1 cup unsalted vegetables stock ( you can choose chicken stock or water ) 💚60 g peas . . Heat the butter on a saucepan then sauté the leek for 5 minutes then add the potatoes and the stock. Bring to boil then reduce the heat, cover the saucepan and let it simmer for 10 minutes. Add the peas and continue cooking for 5 minutes or until cooked. Blend to the desired consistency. . . This recipe was taken from the book “Feeding your baby and toddler”. .
