🌴🍫👩‍🍳 R E C I P E T I M E 👩‍🍳🍫🌴 . We are super excited to be featuring @arcticberries in our latest WellFitBox. We are crazy about these superfood powders as you can create super tasty recipes with them. Check out their latest creation. . Vegan Molten Chocolate Cakes With Coconut Berry Sauce . Ingredients: . Cakes - 1 cup coconut sugar - 3 generous Tbsp cacao powder - 1/2 cup coconut oil - 3/4 cup oats - 3/4 cup almond milk - Dash vanilla extract - Tsp baking powder - 1/2 cup ground almonds - Pinch sea salt - 1 cooked beetroot (try also adding a few teaspoons of berry powder to take mix for extra fibre and flavour) . Berry Sauce: - 3/4 cup coconut cream - Tbsp Arctic Berries Blueberry Powder - 1-2 Tbsp agave syrup . Method:  Preheat your oven to 180c and line a cupcake tray with paper cases (or simply minutes lightly grease the tin) Add the oats into a food processor and blend until they form a fine flour, then set aside. In a food processor or high speed blender, combine the beetroot, coconut oil and coconut sugar, then blend these until well combined. Pour in the almond milk and vanilla extract, then blend again. Add in your dry ingredients and blitz everything up until you’re left with a smooth batter. Divide this amongst your cupcake tray (should make about 9 cakes) and pop these into the oven to bake for around 18 minutes. Remove from the oven and allow to cool slightly before transferring to a wire wrack to complete the cooling process. Meanwhile, for the sauce, mix together the coconut cream, sweetener and Wild Blueberry powder until completely smooth. Serve the cakes with a drizzle of the delicious sauce and enjoy! Sweet potato & Chickpea patties for this weeks meal prep 👌🏼 A delicious plant based source of protein and good carbs to add to your salads and veggies. . +Roast one large/ 2 small whole sweet potatoes until soft. Once soft cut open and scrape out all of the insides (leaving the skin behind) into a bowl. + Add 2 cans of chickpeas to a blender and blend until broken up for 10ish seconds. Add to the bowl with the sweet potato + Add one handful of cut up coriander + Add 1 tsb of: ground coriander, chilli flakes, paprika, cumin, salt + Mix all together, roll into balls, cover in sesame seeds and flatten on baking paper with a fork. And to be honest, they’re more like thickshakes than smoothies🙌🏼 . ✅Use frozen fruit. It’s a must. And frozen bananas as the base make the best smoothies, followed by frozen mango + pineapple (or a combo of these). ✅Invest in a high-powered, good quality blender. I have a @froothie and it’s the best ever! ✅Use as little liquid as you can for blending. My go-to ratio is approx 1/2 cup liquid to every 200g frozen fruit. ✅Add some flaxmeal, chia seeds and/or protein powder for extra thickness and satiation💫 . To make this one I blended👉🏼 1 frozen banana, a handful of frozen mango, 1 tbsp @pranaon coconut milk, 1 tbsp flaxmeal, 1 tsp matcha + 1/2 cup almond milk. Topped with @padma.wellbeing granola.
