(New Recipe!) Calling all cauliflower lovers 🙋🏻 I’ve got a bowl of Kung Pao Style Cauliflower over some rice. I simply stir-fried the cauliflower! ⠀ By @thefoodietakesflight⠀ __⠀ Kung Pao Style Cauliflower⠀ 2 small heads cauliflower (makes around 3 1/2 cups of florets)⠀ 1 tbsp soy sauce + 1 tsp cornstarch, mixed⠀ __⠀ 3 tbsp oil⠀ 4 cloves garlic, minced⠀ 1/4 cup sliced onion leeks⠀ 1 red bell pepper, sliced⠀ 1 green bell pepper, sliced⠀ 1/4 cup peanuts, optional⠀ Dried chili, optional⠀ 1/4 tsp Szechuan peppercorns, optional⠀ __⠀ Sauce⠀ 1 tbsp Chinese black vinegar⠀ 3 tbsp soy sauce⠀ 2 1/2 tbsp coconut sugar⠀ 3 tsp cornstarch + 2 tbsp water⠀ __⠀ 1. Mix all the sauce ingredients together except the cornstarch and water.⠀ 2. In a bowl, marinate the cauliflower in soy sauce and cornstarch mix for 10-15 minutes.⠀ 3. Add 1 tbsp oil in a pan. Place the marinated cauliflower and cook for 15 minutes until tender. Cover while waiting for the cauliflower to cook in the steam. Set aside cooked cauliflower.⠀ 4. Add 2 tbsp of oil in a pan. Once hot, sauté the garlic, onion leeks, bell peppers, Szechuan peppers, and dried chili (if using).⠀ 5. Add in the sauce mixture. Once it boils, add in the cornstarch and water mixture. Lower heat and then mix well. Add in the cauliflower. Cook until the cauliflower absorbs the sauce and is thick.

Pumpkin Spice and Everything Nice! 🍁 🍂🍁⁣ ⁣ Pumpkin spice oatmeal is a tummy-warming way to start any fall day.⁣ ⁣ In a small pot over low-medium heat, add 1/3c oats, 1/3c almond milk, 1/4c pumpkin purée (not pie filling), 2 tbsp erythritol-based brown sugar sweetener and 1/2 tsp pumpkin pie spice. HUMP DAY PASTA: CREAMY “cheesy” LEMON PAPRIKA PASTA and SMOKED SALMON AND DILL! Made this yesterday for lunch and it was so bomb 💣 This sauce is super easy and just requires one bowl! Can be made with regular Greek yogurt or dairy free Greek yogurt! I used my vegan Parmesan recipe (posting below), but you could use regular Parmesan too. How’s everyone’s week going?! I’m trying to get a bunch of stuff done this week for work because I’m headed out to Cali next week (can’t wait!) But until then...werk werk werk! • • • Deets: Wild smoked salmon, avocado. Pasta: One box of @eatbanza pasta, warm spinach and this sauce. Sauce: 1/2 cup Greek style yogurt, 1 clove garlic, 1 teaspoon lemon juice, 1/2 teaspoon salt, zest from one small lemon, 1 tablespoon olive oil, 1 teaspoon @bragglivefoodproducts coconut aminos, 1/2 teaspoon onion powder, 1/8 teaspoon paprika, 2 tablespoons vegan Parmesan (or sub regular parm). One of the pieces of advice I try give out over anything else I say to clients - is always always ALWAYS Batch Cook! Morning! Hope everyone is rocking this week!! So excited this morning. We have our annual community dinner tonight. They shut down the main street and put tables up and everyone gets together and has dinner! There are reservations for 2000 people!! Which is huge since the entire county population is about 3000!! Just sharing my meals from yesterday. Everyone follows a nutrition plan that works for them but there are so many people out there that are not educated that think you can not eat carbs because they make you fat. Carbs do not make you fat. Eating more calories than you need make you fat! Breakfast is a bowl of steel cut oats. There is a banana hidden in there too! Snacks are Greek yogurt and raspberries and a quest bar. Lunch was a protein box of goodies! That's tofurkey... Dinner is tuna steak and lentil pasta and okra. I’ve talked about my Crossfit boobs before. ⁣ My friends & I all joke about our bodies & things we’d like to swap 🍑 👉🏻🍈🍈⁣ ⁣⁣ And the fact I love & live in bralettes. They’re functional & more comfortable. Had a guy one time ask me if I even owned a regular bra... which I responded why do you care they just end up on the floor anyways.⁣ ⁣ No filter, it is what it is ladies. 🤷🏼‍♀️😄⁣ ⁣ My boobs may not be the size I’d like but my arms & shoulders are pretty spectacular.⁣ ⁣ It used to really bother me being smaller chested because I felt being petite I looked like a child. Hell I wasn’t eating anyways so I was super frail on top of it years ago. ⁣ ⁣⁣ I’m not shredded 24/7.⁣ ⁣ Right now I’m just eating all food and lifting all the weights and loving all the life. It’s hard for me to try & gain muscle. Mentally & physically. On top of Crohns & a finicky digestive system😑⁣ ⁣ It’s easy for me to cut. Trying to get smaller is something I did for years in a bad head space. So I feel all yalls struggles & frustrations. ⁣ ⁣⁣ I do not look like a photo shoot in the morning or the majority of the year. I train & eat now based upon what I love & what I feel. Not what I think is going to fix myself to a destination happy. Because I know now happy is a state of being. ⁣⁣ ⁣⁣ I spent decades fighting against my body’s natural set point. Chronically dieting, getting nowhere. Nowhere but pissed off until I learned how to periodize my nutrition & actually EAT. ⁣ ⁣⁣ ⁣ THINGS YOU LOSE CHRONICALLY WORRYING ABOUT LOSING WEIGHT:⁣⁣ 🦄Your vibrance⁣⁣ 🦄Your joy⁣⁣ 🦄Your clarity ⁣⁣ 🦄Your flexibility⁣⁣ 🦄Your mind⁣⁣ 🦄Your relationships⁣⁣ 🦄Your energy⁣⁣ 🦄Your life ⁣⁣ ⁣⁣ Remember, the diet you follow doesn’t matter. Offset loading? Heard of it? Mibees aye, mibees no😊 Something I've messed about with off & on over the years. Its brutal... You can use a different load on either side of the barbell whilst maintaining a regular grip, different weights of dumbells, or the same load on each side of the barbell with an offset grip (one hand nearest the plate, one hand in the middle of the barbell) (in my opinion, the toughest) I must stress, I'd not be trying this if you're new resistance training & definitely not something to suggest to a trainer who's not familiar with the principle.... You can still lose weight and include potatoes you may just need to cut calories from somewhere else in your diet. The balsamic vinegar gives a lot of flavor for not very many calories in this recipe making it a solid meal for when you’re trying to lose weight. It’s quite a bit of volume for how many calories it has. As many of you know I don’t love using breasts in preps. It’s much harder to get it right when compared to chicken thighs. However, I know a lot of you need to use chicken breast for your macro needs so I try and have a variety. I prefer roasting breasts for meal prep as I think most people can achieve a juicier meat by roasting over stovetop cooking. ⁣ ⁣ On the weight gain side is the addition of red potatoes and extra olive oil to add more calories. Chicken breast is a lean meat so it may be even better for you to swap it for a fattier meat if you wanted an even higher calorie meal. chicken veggie chili and pumpkin cornbread! blake and i both gasped when we took our first bite of this combo 😂 it’s soo good and a new favorite for sure. the chili is simple and it’s loaded with veggies for a really nutrient-dense meal. corn bread recipe is in yesterday’s post, and chili below. website is currently getting a makeover so stay tuned for new recipes to be uploaded there, too! _______________________________ 1 tbsp avocado or olive oil 1 yellow onion, finely diced 3 cloves of garlic, minced 1 bell pepper, diced 1 medium zucchini, diced into small pieces 1 lb ground chicken (ground turkey will work) 2-3 tbsp chili powder 1/2 tbsp smoked paprika 1/4 tsp turmeric dash of cayenne (optional) 1 (28 oz) can crushed tomatoes 1 cup low sodium vegetable broth 1 bag of frozen riced cauliflower sea salt, to taste _ 1. heat a large heavy bottomed pot over medium heat. once hot, add avocado oil and stir in onion and garlic. cook, stirring occasionally, for 5 minutes. 2. stir in bell pepper and zucchini. cook, stirring occasionally, for 3 minutes. 3. add ground chicken, sea salt, and all other seasonings, and break up into small pieces and cook until chicken is cooked through. 4. pour in cauliflower rice, crushed tomatoes, and vegetable broth, then reduce heat to a simmer and cook for 35-40 minutes. taste and adjust salt and/or spice level.

A day of what I used to eat! —Calories and macros update— . 🤔Would you think this is not healthy or not enough for a woman who lifts weight x4 and cardio x2 a week, 5’7’’ tall, 143 pounds, 32 years old? Well the reality is; it LOOKS enough and healthy however, it surely wasn’t enough for me! . ❌I used to consume 1400-1500 calories a day and workout 6x a week in order to keep losing weight! I was constantly hungry and always thought that there was something wrong with me and I was kind of ashamed when some of you were writing that I eat too much food and despite that I was still hungry! The reality is; I was eating high volume food so I could fight my hunger cues but they had not enough calories! Just lots of vegetables… Consuming only 100 g carbs and 40 g fat a day for over 7 months and then end up eating almost a whole jar of peanut butter at one sitting is not healthy! Honestly I always lived like this! Little food, too much exercise! Cause I’ve always had weight issues and it was a massive problem for me! I LOVE food and I LOVE eating! I am an exact definition of a person who lives to eat! Living like this was not something I wanted to do for the rest of my life! Lose weight by starving myself, gain it back by binge eating over and over again!!!! . ✅ Now I am on a completely different journey with the help of my nutrition coach @lauriechristineking !! This is totally outside my comfort zone cause I consume almost double the amount of calories and workout not more than 4x a week however, I feel happy, energetic, I am overall a better human being, sleep better, way more productive and have better relationship with food! 🙏🏻I accept my body the way it looks right now cause I am healthier and happier inside! Aesthetics is not my priority at the moment! This journey will take a long time and I am ok with that too!!
