Excited for the holidays comin' up is an understatement! Creamy roasted butternut and kabocha squash soup by @lindseyeatsla for Thanksgiving inspiration.
1 butternut squash (cubed, peeled and roasted)
1 small kabocha squash (cubed, peeled and roasted)
1/4th teaspoon Simple Truth Organic nutmeg
1/4th teaspoon Simple Truth Organic paprika
1 white onion, chopped
1 shallot, chopped
4 garlic cloves
1 thumb ginger
1/4th teaspoon red pepp flakes
1 teaspoon sugar (can adjust to taste)
½ cup heavy cream
4 cups vegetable broth
salt and pepper to taste
Begin by roasting your squash with salt, pepper, and olive oil in the oven for 40-50 minutes until fork tender. Heat a deep pot with a drizzle of olive oil and sweat your onions, shallots, garlic and ginger. Add your aromatics: red pepper flakes, nutmeg and paprika. Add your roasted squash and mix for 5-10 minutes.
Add your broth, sugar and season to taste. Let boil on medium-low until everything is soft and flavors are combined. Blend in an immersion blender or stand blender. Once creamy and blended, add your heavy cream. Adjust seasoning to taste. Serve, top with pumpkin seeds!

Pushing through adversity, be it mental or physical, gives that extra spark of confidence.
It’s easy to cozy up in bed to your partner or to your warm blanket, as the cool breeze of fresh air comes through the slightly open window in the early morning hours when the sun hasn’t even picked out to shine its light on us.
It’s easy for my little Maia to just give up on the mystifying joy of reading as it challenges her mental strength at her young age.
BUT the joy and confidence gained by pushing through adversity, however small and insignificant it may seem, is unmatched!
So push through whatever today brings! Push through so that you may dance with joy as Maia did after reading her book. Push through the lies you have been telling yourself. Push through, for you are capable. You are worthy. You are deserving. You have the tools with in you.
Stop lying to yourself and start believing in yourself!
Chickpea Tomato Curry by @janetsmunchmeals 🍅🌿 This dish is so easy to make and packed with healthy ingredients! .
1 block extra firm @housefoodsamerica tofu, drained and sliced
2.5 cups frozen brocc
1/2 cup frozen peas
1 can chickpeas, drained and rinsed
1 cup cherry tomatoes, sliced
1/3 can full fat coconut milk
Small handful baby spinach
Avocado or coconut oil
Seasonings for broccoli and peas:
1/4 tsp each curry powder, turmeric, cumin, kosher salt and pepper
2 tsp oil
1/4 cup water or more if pan starts to dry
Seasonings for chickpea tomato curry:
1/2 tsp each curry powder, chili powder, cumin, onion powder
1/4 tsp each kosher salt, garlic powder and pepper
Cook tofu slices in grill pan or large pan on both sides with generous dash of garlic powder and salt, until lightly browned. Takes about 5 min per side once pan is hot, over medium heat.
Meanwhile in a large pan, add brocc, oil, water, seasonings stir and cook covered on medium heat for 5 minutes, stirring occasionally. Uncover and add the peas, stir and cook another several minutes until peas are bright green and brocc is tender.
Separately in medium saucepan, add chickpeas, seasonings, tomatoes and cook for 3 min over medium heat with 1 tsp oil. Then add coconut milk and simmer for about 5 to 7 min until sauce thickens a bit. Stir in baby spinach, cover for a few minutes as spinach wilts

🍒Do you have health issues that cause you to be aware of how much sugar you intake? Maybe you have a family history of diabetes or other illnesses that require that your sugar intake is watched?
🍓If so, I know it can be difficult to know which foods you should eat and which you shouldn’t. For instance, we all know that fruit is healthy, but they also can pack a lot of natural sugars with them which can be an issue with those that suffer from high blood sugar.
🥑Or if you are someone like me that watches your carbohydrate and sugar intake, then it is important to know what you should and shouldn’t be eating.

Vegan Gluten Free Cognac and Caramel Coconut Cheesecake by @barbarafrenchvegan 🧡 .
Ingredients crust :
- 1 cup gluten free oats
- 6 tbsp hazelnut flour
- 2 tbsp melted coconut oil
- 2 tsp agave syrup
Ingredients cheesecake :
- 200 gr Soaked Cashews
- 1 can coconut milk (only the cream)
- 2 tsp agave syrup
- 1/2 tsp vanilla powder
- 1 tsp cognac
- the night before place cashews in a bowl and cover with water. TIPS : you can soak the cahews in hot water for 1 hour if you are in hurry.
- place all crust ingredients into a food processor and mix until you get a sandy texture. It’s ready when you can press the mixture and it’s firm.
- spread the mixture into cake tin and press evenly on the bottom. Set aside.
- drain cashews.
- place all cheesecake ingredients into blender and blend until smooth and creamy. Pour on top of the crust. - place in fridge for 3-4 hours or until set.
- pour vegan caramel on top. Decorate with caramelized pecans and enjoy! #bestofvegan

Making polenta for breakfast is reminiscent of eating grits as a kiddo in the Deep South. I veganized and healthified a breakfast bowl from my past and it was fantastic. Polenta made with @pressedjuicery oat milk for creaminess and nutritional yeast for cheeziness topped with a tofu scramble, tempeh bacon, and pea shoots. We will definitely repeat and I encourage you to copy cat.

The list goes on and on... Let me tell you, that’s all it is.
A voice that is a second-guessing thought process that simply reacts without thinking to try to defend your insecurities.
Fuck the insecurities.
That voice is not you.
You are far more than what people see with their eyes.
You wouldn’t want someone to value you as a person based on what they see with their eyes, so there’s no reason for you to belittle yourself to what you see with your eyes.
