Holly and I had one major goal for the entirety of us working together.⠀ ⠀ Develop a strong relationship with food to eat freely over time without worry of body fat gain.⠀ Not all goals are scale or body weight related, and Holly made it quite clear that’s not what she was chasing.⠀ ⠀ We wanted to create a fitness routine that she could stick to at home and increase her knowledge in calories, portions, and how her body adapts to different foods.⠀ ⠀ By not focusing on the scale, but on how she felt each day, Holly was able to shed inches off her waist and push her strength to new heights - all in the comfort of her own home!⠀ ⠀ If she didn’t have a busy work day, she supplemented her activity levels with brisk walks to get groceries or run other errands.⠀ ⠀ Simplicity was the key here.⠀ ⠀ We didn’t drastically slash any calories, and we sure as hell didn’t cut out any food groups. We made sure she was getting enough protein each day, didn’t feel deprived of any social events, and maintained good habits throughout the process.⠀ ⠀ Maintenance mode can be the hardest part of a “diet” but it is arguably the most important lesson to learn. Quick vegan Pad Thai! With... Whole wheat fettuccine 😜. I prefer these to the white rice noodles, you get more nutrients and more fiber! With tofu, leek, carrot and red bell pepper, it's basically what we had in the fridge. We did have a vegan ready made packet of pad thai paste (from the our last trip to Thailand) so that it was very easy to put together. Chop up your veggies, water stir fry them until tender. Meanwhile cook your noodles in a pot and your tofu strips in a pan with some oil to crisp up. Once veggies are tender add the pad thai sauce, then the pasta and stir it all together. Day 12 Two things I learned while in this journey 1st is I am better than I was yesterday, but not as good as I will be tomorrow.
